Job requirements:
Must have at least 3 years of experience in brewery setting
Experience in supervising/managing a team as a head brewer/brewery supervisor is must
Strong understanding and technical skills of brewery equipment and the science of brewing
Able to use computer, Excel, Word, and other programs
Educational Requirements:
Completion of secondary (high) school
Language Requirements:
English

Hours:
30 to 35 hours per week

Responsibilities:
You will be responsible in training staff(s), recipe development and supervising all operations from preparation to packaging and safety and quality control. You will work with brew master to establish efficient work procedure and environment and promote the brewery.

• Machinery maintenance schedules
• Physical qualities & yields variations of grains and hops
• Different lots variables of all raw materials & Recipe modifications
• Age, rotation & inventory of all raw materials
• Storage environment/quality of all raw materials
• All raw materials ordering
• Bottle re-fermentation & Barrel aged beers evolution
Laboratory work:
• Working in a 100% sterile environment
• Autoclave manipulations
• Agar slants inoculations
• Yeast bank storage environment & inventory
• Cross microbial contamination control
• Yeast and microbes isolation
• HLP and/or ADN microbial testing
• Propagation of healthy yeast cells from agar slants to fermenter
• Yeast counts at pitch & throughout fermentation stages
• Yeast cropping & generations management
• Yeast optimal vitality & viability control
• Optimal Oxygen ppm targets for different yeast strains
Other Brewing Operations and Quality Control duties:
• Training assistant brewer(s)
• A to Z sensitiveness & follow ups (constant visual, smelling and tasting of various
materials, such as raw grains, hops, yeast, wort, fermenting green beer, beer at crashing
and maturation stages, beer transfers, non carbonated and carbonated pre packaged beer,
post packaged beer, as well as evolution of beer all the way to the beer glass) to assure
quality & consistency
• State of the art wort production & intensive data records
• Impeccable CIP procedures
• Multiple titrations (water, CIP chemicals)
• Sensitiveness to beer oxygen pick ups from wort production to cellaring to packaging
• All packaging procedures
• Bottle re fermentation procedures
• Beer storage environment, shelf life & rotation management
• Protocols writing & adjustments
• Educating the FOH (Front Of House) and other Brewpub staff about beer
• Be part of beer sensory panels and discussions
• Be part of designing recipes with the Brew Master
• Travelling (for example, promotional festivals)
